– 2 large sweet potatoes, peeled and cubed

– 1 tablespoon olive oil

– 1 medium onion, chopped

– 2 cloves garlic, minced

– 1 cup low-sodium chicken broth

– 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

– 1/4 cup heavy cream or coconut cream

– Salt and pepper to taste

 

 

 

Instructions:

 

  1. Prepare the Chicken Roulade:
  2.     Preheat Oven:     Preheat your oven to 375°F (190°C).
  3.     Prepare the Filling:     In a bowl, combine chopped spinach, sun-dried tomatoes, and crumbled feta cheese. Season with salt and pepper.
